My husband celebrated his 57th birthday yesterday,& asked me to make a special dinner for his special day. He wanted Lasagna, & I put a special twist on my original recipe that I have made since 1979, in commemorating his special day, tying in his Irish Roots by adding Irish Sausage along with the Italian, ground Round & pepperoni, with a few extra cheeses as well. He loved & enjoyed it immensely. I made enough to share a complete dish with my neighbors, they appreciated the gesture. As always he LOVED HIS SPECIAL BIRTHDAY DINNER, & Birthday Brunch & gifts, a special day for a great husband.

Ingredients

  • 1 pound irish sausage(or use extra italian)
  • 1 pound italian sausage
  • 1 pound lean ground beef ( i used 3 pounds)
  • 1 cup chopped onions
  • 6 cloves garlic, minced ( use less if desired)
  • 2 large cand italian or crushed tomatoes(about 4 pounds)
  • 1 jar pasta sauce ( your choice)
  • 2 packages dry spaghetti sauce mix
  • 1 1/2-2 teaspoons italian seasoning
  • 1 teaspoon nutmeg
  • 3 ounces sliced pepperoni
  • 1 package lasagna noodles,cooked according to pkg. directions
  • 2 tablespoons olive oil
  • 6 large eggs, room temperature
  • 2 pounds ricotta cheese
  • 2 pounds shredded mozzarella cheese
  • 1 1/2 cups shredded parmesan cheese
  • 4 slices co jack cheese (optional) cut into triangles
  • 2 slices cheddar cheese(optional) cut into triangles

How To Make dan's 57 birthday lasagna by lady rose

  • Step 1
    PREHEAT OVEN TO 350 DEGREES F.Combine Itilian and Irish Sausage with Ground Round in a large pot, and cook until browned, breaking apart any large chunks.
  • Step 2
    Push meat to side of pot and add chopped onions and minced garlic. Saute' 5 minutes. Stir in tomatoes, spaghetti sauce mix, italian seasoning or oregano, & nutmeg, and pasta sauce. Let simmer for about 35 minutes, & stirring several times to prevent sticking.
  • Step 3
    Cook noodles according to package directions, adding olive oil to prevent noodles from sticking. Stir often and cook till al Dente'. Drain noodles and cover in cold water.
  • Step 4
    Beat eggs slightly and add ricotta cheese. Stir until mixture is smooth and no visible lumps.
  • Step 5
    Line bottom of 13X9X2 inch pan with with meat sauce, and then a layer of drained noodles. Top with meat sauce, one third of parmesan cheese, one third of ricotta mixture, , and one third of shredded mozzarella cheese, then top with a layer of pepperoni slices. Repeat until all is completed. For the top layer, add the cheese slices in a decorative pattern of your choice, alternating colors if desired.
  • Step 6
    Bake in a preheated 350 degree F. oven for 35 to 45 minutes or until hot and bubbly. Remove from oven and allow to sit at least 15 to 20 minutes before cutting into wedges to serve. Serve with Garlic Bread, and your best salad.
  • Step 7
    This Lasagna could easily be called a MEAT LOVERS LASAGNA, because my husband loves lots of meat in any dish. I used exta aside from the normal for his special Birthday, and extra cheese as well. The quanities I used was enough to make a full EXTRA dish for 2 of my neighbors, and they loved and appreciated it very much. You could also make an extra dish and freeze for later, when there is no time to cook.
