I love this soup especially since you are using up some of the abundance of zucchini. This is so tasty and a real tummy warmer.

Ingredients
- 1 1/2 cups rotini macaroni
- 1 box 10 oz. chopped frozen spinach
- 2 cans beef broth
- 1 can tomato soup
- 1 - small can tomato paste
- 4 cups milk
- 2 cups zucchini , sliced
- 1/4 teaspoon garlic powder
- 2 tablespoons pimento, chopped
- 1 teaspoon dried oregano
- 4 slices fried and crumbled bacon
- 2 cups shredded cheddar
- - parmesan cheese, to taste
How To Make creamy minestrone soup

Step 1Cook Rotini until firm, rinse and drain. Cook spinach in beef broth for 10 mins. Add tomato soup, paste, milk, cooked Rotini, zucchini, garlic powder, oregano and cook additional 15 mins. Add cheddar and pimento. Before serving add bacon and parmesan.
