Ingredients

  • 6 ounces whole wheat pasta
  • 1 tablespoon olive oil
  • 1 - leek, thinly sliced
  • 2 cloves garlic, minced
  • 3 tablespoons garlic herb marscapone cheese
  • 6 cups baby spinach
  • - parmesan cheese,pepper,red pepper

How To Make creamy leek & spinach pasta

  • Step 1
    In a large pot boil water for pasta.
  • Step 2
    Heat olive oil in large pan and add leeks and garlic when hot.
  • Step 3
    Season leeks with salt and pepper and sauté until the mixture is soft.
  • Step 4
    When water comes to a rolling boil add past and cook until tender then drain.
  • Step 5
    Add cooked pasta to pan and toss with mascarpone and spinach.
  • Step 6
    Finish with freshly grated parmesan and red and black pepper.
