  • 2 bunch
  • 1 lb
    orecchiette (barilla)
  • 2 Tbsp
    anchovy paste
  • 4-6 clove
    garlic (sliced)
  • 3/4 c
    extra virgin olive oil
  • ·
    red pepper flakes (to taste)

How to Make cicoria con orecchiete (Chicory with Pasta)


  1. I cleaned the chicory and that's so easy you just cut the base off and take off any chewed up leaves or ones that have browned around the edges. Some people cut them first then wash but I find it easier to wash the them whole and then cut the smaller ones in 1/2 and the larger ones in 1/3's they are pretty sandy so make sure you wash them good.
  2. I slice the garlic and add it to the oil with the pepper flakes and anchovy paste let the garlic brown over a medium heat just as it starts to get gold shut it off... if you burn the garlic you'll need to start over...
  3. When Im ready to make dinner I fill a 6-8 qt pot 1/2 way with water and let it come to a boil. Then I add the chicory and let it come up to a boil again and cook for about 5 mins then I add the pasta right to that pot and stir stir stir... when the pasta is ready I drain the water but keep some (I do that by eye but just incase drain the water into a bowl so you have it if you need more I would guesstimate a cup and a half should be plenty) if you made the garlic way earlier then just heat it up some and throw it in... mix well and serve... you can add grated cheese to your bowl of pasta.
