Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • salt and pepper
  • sweet paprika
  • 4 boneless skinless chicken breast
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken stock
  • 1 1/4 cups heavy cream
  • 1/2 cup milk
  • 2 scallions, chopped
  • 1/3 cup freshly grated Parmesan cheese
  • 1 pound linguine pasta, cooked and drained
  • fresh parsley, for garnish

How To Make chicken with onion cream sauce linguine

  • Step 1
    Heat the olive oil and butter in a large saute pan. Season the chicken breast with salt, pepper and paprika. Cook the chicken breast in the oil and butter for about 5 minutes each side until no longer pink. Remove the chicken and set aside to rest.
  • Step 2
    Add the onion and garlic to the pan and saute 3 minutes. Add the chicken stock. Bring to a boil then reduce to low and simmer 10 minutes. Add the heavy cream, milk, scallions, and Parmesan cheese.
  • Step 3
    Simmer until slightly thickened, about 5 more minutes. Add the cooked linguine and stir to incorporate the sauce into the pasta.
  • Step 4
    Slice the chicken breast diagonally. Plate the linguine and top with a chicken breast. Garnish with parsley.
