chicken casino pasta
Everyone has heard of clam casino. I love any dish that contains bacon. I thought I would make a dish reminiscent of it. Instead of clams, I used chicken in this dish. I added some Italian herbs, white wine, and chicken stock. The crushed red pepper flakes give it a little kick. It is topped off with parmesan cheese. I hope you all enjoy my version of this dish.

Ingredients
- 4 cloves pressed garlic medium cloves 1 for chicken
- 1 cup chopped red bell pepper
- 1 cup diced onion
- 8 ounces bacon regular or thick cut
- 4 tablespoons butter
- 3/4 cup white wine
- 1 cup chicken stock +2 tablespoons for arrowroot or cornstarch
- 1 tablespoon italian seasoning
- 3/4 teaspoon red pepper flakes
- - salt and pepper to taste ( i used garli salt)
- 11/2 - 2 pounds chicken cutlets cut into 2 inch pieces
- 2 tablespoons olive oil, extra virgin
- 4 cups cooked small pasta like penne or ditali
- 1/3 cup parmesan cheese for serving
- 1 teaspoon optional fir thickening arrow root or corn starch
How To Make chicken casino pasta

Step 1Place chopped bacon, red bell pepper, and onion into a large skillet.

Step 2Cook ingredients on medium - medium high until bacon is fully cooked. Stir occasionally.

Step 3When mixture is cooked through. Add in 3 cloves of pressed garlic. Cook for one minute. Drain off most of the bacon grease. Move mixture to a platter and set aside.

Step 4Into the skillet. Add 2 tablespoons of Olive oil. Add in the cut up pieces of chicken. When chicken is almost cooked through and no pink shows. Add in the remaining press clove of garlic. Stir Chicken and garlic for one minute over medium heat.

Step 5Add the pepper onion bacon mixture back into pam. Stir well.

Step 6Add in the wine, Italian seasoning, red pepper flakes salt and pepper to taste

Step 7Cook mixture until wine is reduced in half. Add in the chicken stock and butter. Bring to a boil. Reduce heat to medium and cook for 5 to 10 minutes. Remove pan from heat.

Step 8Mix arrowroot or cornstarch with 1-2 tablespoons of chicken stock. Add to the chicken mixture in pan . Stir frequently until thickened.

Step 9Add in the pasta and combine well. Cook 5 minutes. Salt and pepper to taste. Serve with grated Parmesan cheese.
