cheesy pasta with spinach and roasted carrots

This is a very healthy and yummy dish! I made it up to try to get my daughter to eat something good for her without saying EWWWWW! She tried it and said "Can I have some more?"

Ingredients

  • 3 large carrots peeled (or more depending how many you are feeding)
  • 1 cup fresh spinach roughly chopped
  • 12 ounces no yolk noodles
  • 1 cup low fat or regular shredded monteray jack cheese
  • 2 1/2 tablespoons butter
  • 1 can diced tomatoes with juice
  • 3 cloves garlic minced
  • - salt and pepper to your liking
  • - extra virgin oil
  • 2 teaspoons onion powder
  • 2 teaspoons basil chopped

How To Make cheesy pasta with spinach and roasted carrots

  • Step 1
    First peel carrots and place in aluminum foil drizzle olive oil on top of each carrot then add salt and pepper. Wrap up tight and place in pre-heated 425* oven. Cook for aproximately 1 hour- 1 hour 15 min. (They will be soft when done.)
  • Step 2
    in the last 15 min. of ccoking time for the carrots, start boiling water for the noodles and prepare spinach, garlic, and tomatoes. Set aside add salt to water and cook noodles for aproximatley 6-8 min. Drain when done.
  • Step 3
    In a skillet pour the noodles and add butter, salt, a good drizzle of extra virgin olive oil and pepper "cook on medium heat". Mix well, next add garlic and tomatoes let cook for about 2 min. add spinach and mix well. Sprinkle cheese all over the pasta. Now add the roasted carrots on top or serve on the side of the pasta Enjoy!!!
