  • 5 oz
    dried rotini
  • 3 c
    chopped cauliflour
  • 3 Tbsp
    white balsamic vinegar
  • 2 Tbsp
    vegetable oil
  • 3 Tbsp
  • 2 clove
    garlic minced
  • 1 large
    sweet red pepper cleaned diced
  • 1/2 c
    chopped onion
  • 1/4 c
    sliced almonds toasted
  • 1/4 c
    chopped fresh basil
  • 2 oz
    goat cheese crumbled

How to Make cauliflower and sweet pepper pasta salad


  1. In a large pot cook the pasta in lightly salted boiling water 7 minutes Add cauliflower; cook 3 minutes more or until pasta is done. rinse with cold water to cool.
  2. M eanwhile, Inlarge bowl stir together vinegar,oil' honey, garlic. Then add the pasta mixture, sweet pepper, onion, almonds, and basil, toss to mix it up. stir in cheese slowly. add salt if desired. top with croutons optional. serve
