Ingredients

  • 3/4 cup flour
  • 3 pounds lean beef chuck, cut into cubes
  • 3/4 cup white wine, medium
  • 1/2 pound bacon
  • 1/2 cup cooking oil
  • 1/4 cup tomato paste
  • 1/4 teaspoon thyme
  • 3 cloves garlic minced
  • 2 large onion diced
  • 6 sprigs parsley
  • 3 cups beer
  • 1 - bay leaf
  • 7 medium carrots cutup
  • - salt and pepper, to taste..
  • - hot cooked noodles

How To Make bob's daring beer and wine stew..

  • Step 1
    In a hot dutch oven cook bacon with oil till almost crisp. Put flour in a bag, add meat and shake to coat meat.. Remove bacon from oven with slotted spoon, cut up bacon and set a side.. Brown beef chuck in bacon drippings on all sides..
  • Step 2
    Now add garlic and onion cook 4-5 minutes.. Add beer, wine, bay leaf parsley, and thyme.. Partially cover and cook over med heat for 1 1/2 hours.. Remove bay leaf and add carrots. You may need to add more beer, cook for about one hour more... Serve over cooked noodles..
