Betty's slow cooked ham hock pasta sauce

This is a low cost, rich pasta sauce. A tomato and bacon sauce which is great over pasta and even better the next day, a winner with young and old! Make sure that the ham hock is always covered in the sauce when cooking, you may need to add more water during cooking. Cook on a low heat, this dish can't be rushed.

    meaty ham hock
  • 1 large
    onion, chopped medium fine
  • 2 carrots
    chopped medium fine
  • 1 large
    capsium/pepper chopped medium fine
  • 2
    celery stalks, chopped medium fine
  • 2 can(s)
  • 1 bottle
    tomato pasata
  • 2 tsp
    crushed garlic
  • 1 heaped tsp
    dried basil
  • I heaped tsp
    dried oregano
  • 4
    dried bay leaves
  • 1 Tbsp
  • 2 can(s)
  • 2 bag(s)
    pasta - cook separately to serve

How to Make Betty's slow cooked ham hock pasta sauce


  1. In a large heavy based saucepan, heat some oil and fry the chopped vegetables. Fry until wilted and no longer crunchy, about 7 - 8 minutes. Stir constantly.
  2. Add everything except the hock and stir through. Reduce the heat to low and add the hock - ensure that the ham hock is always "buried" in the sauce
  3. Cook over a low heat for 4 - 5 hours until the hock is cooked and meat is falling off the bone. Remove the hock from the sauce, discard the skin and bones. Chop the meat and return to the pot.
  4. Cook pasta separately and stir through the sauce.
