I love baked ziti, but wanted to make a healthier version and so I made this.

Ingredients
- 3 tablespoons olive oil
- 1 package italian-style turkey sausages
- 1 small eggplant, cut into cubes
- 1 - onion, chopped
- 3 teaspoons minced garlic
- 1 - 28 oz can crushed plum tomatoes w/ juice
- 4 cups ronzoni garden delight ziti
- 1/4 cup basil, chopped
- 1/3 cup pitted, chopped kalamata olives
- 2-1/2 cup reduced-fat, shredded mozzarella cheese
- - salt & pepper to taste
- 1/2 cup grated parmesan cheese.
How To Make baked ziti w/ italian turkey sausages

Step 1Heat oven to 400. Spray a 9" x 13" pan w/ cooking spray. Cook pasta as directed and drain. In lg skillet, heat 1 tbsp oil over medium heat. Add sausages, cook, crumbling w/ spoon until cooked through. Remove from heat. Transfer to lg bowl.

Step 2In same pan, heat 4 tsp oil over med-high heat. Add eggplant. Cook, stirring until tender. Transfer to bowl w/ sausages. Place pan over medium heat. Heat 2 tsp oil. Add onion. Cook until soft. Add garlic, cook 1 min.

Step 3Add tomatoes and their juices. Simmer until thickened. In bowl w/ sausages, add pasta, basil, olives, 2 cups mozzarella cheese, and tomato sauce mix. Mix to combine. Season w/ salt & pepper. Transfer mix to baking pan. Sprinkle w/ remaining mozzarella cheese and parmesan cheese. Cover pan w/ foil. Bake 25 min. Uncover, broil for 4 mins.
