This recipe has been around the block a few times but this one I have tweaked from Angela Liddon(thanks for the idea Angela). If you like you can add your favorite meat or chicken or crispy fried bacon pieces to this sauce. You may not want to use Alfredo sauce again once you try this!

Ingredients

  • 2 or 3 medium ripe avocados, pitted
  • 1 large lemon, all the juice and the zest
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 cup fresh basil
  • 2 tablespoons melted butter
  • 1/4 cup olive oil
  • 3 ounces pkg. cream cheese, cut into cubes
  • 16 ounces pkg. angel hair pasta
  • to taste - add pepper

How To Make avocado pasta

  • Step 1
    Cook pasta according to package directions for al-dente.(about 6 minutes in boiling water).
  • When I made this  today it looked a little too thick so I added about 1/2 cup of Margarita mix, oh my -to die for...just the right amount of kick.
    Step 2
    In a food processor or blender add the garlic, lemon juice, and olive oil, cream cheese and basil;process until smooth. Add the avocado pulp,butter, basil and salt. Pulse or process until smooth and creamy.
  • Step 3
    Drain and rinse pasta and place in a large bowl. Pour sauce over and toss to coat evenly. Garnish with lemon zest and pepper. Serve immediately.
