Almond Spaghetti

I don't usually eat meat in my spaghetti; I prefer vegetables. I was looking for a filling spaghetti with a meat alternative that had a lower fat protein & I came up with this today.

The almonds give a nice crunch & light flavor to the spaghetti.


I didn't get pictures for each step on this one, but when I cook it again, I will. :)

Ingredients

  • 1-2 Tbsp
    water, chicken stock, butter or olive oil
  • 1 medium
    onion
  • 2-3 large
    garlic cloves
  • 3 medium
    fresh tomatoes
  • 2 can(s)
    7 oz each of tomato sauce
  • 2 Tbsp
    italian seasoning
  • 1 Tbsp
    garlic powder
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    oregano
  • 3 small
    bay leaves
  • 1-2
    handfuls of natural, whole almonds; chopped & toasted
  • 6 oz
    spaghetti pasta (for gf, use gf pasta)
  • 1 tsp
    olive oil
  • dash/ pinch
    salt

How to Make Almond Spaghetti

Step-by-Step

  1. Place a large pot of water on low, to start heating (for the pasta)
  2. Chop onion & garlic
  3. In skillet, place butter/oil/stock/water & saute onions & garlic until translucent, about 5 or 6 minutes
  4. Stir occasionally so they don't stick/burn
  5. Meanwhile, chop tomatoes into large dice
  6. Open tomato sauce cans & set aside
  7. Once onions & garlic are translucent; add chopped tomatoes
  8. Cook tomatoes, stirring occasionally, until cooked through & moisture has mostly evaporated, on low to medium-low heat (approximately 5-10 minutes)
  9. While tomatoes are cooking, toast almonds (if not already done); remove from pan & set aside
  10. Turn pasta water up to medium - medium high heat to bring to a rolling boil
  11. Add tomato sauce
  12. Add Italian seasoning, garlic powder, salt, pepper, oregano; mix in well
  13. Add bay leaves
  14. Simmer sauce 10 minutes, stirring so it doesn't stick/burn
  15. When pasta water is boiling; add salt & olive oil; stir once
  16. Add pasta (I usually break my spaghetti in half before adding to water, for smaller pieces)
  17. boil pasta to desired doneness (7-10 minutes)
  18. Drain pasta & mix with sauce
  19. When serving, sprinkle toasted almonds on top of spaghetti to serve (1-2 tbsp per person, depending on how much you toasted)
