Almond Spaghetti

The almonds give a nice crunch & light flavor to the spaghetti.
I didn't get pictures for each step on this one, but when I cook it again, I will. :)

Ingredients
-
1-2 Tbspwater, chicken stock, butter or olive oil
-
1 mediumonion
-
2-3 largegarlic cloves
-
3 mediumfresh tomatoes
-
2 can(s)7 oz each of tomato sauce
-
2 Tbspitalian seasoning
-
1 Tbspgarlic powder
-
1 tspsalt
-
1/2 tsppepper
-
1/2 tsporegano
-
3 smallbay leaves
-
1-2handfuls of natural, whole almonds; chopped & toasted
-
6 ozspaghetti pasta (for gf, use gf pasta)
-
1 tspolive oil
-
dash/ pinchsalt
How to Make Almond Spaghetti
- In skillet, place butter/oil/stock/water & saute onions & garlic until translucent, about 5 or 6 minutes
- Stir occasionally so they don't stick/burn
- Meanwhile, chop tomatoes into large dice
- Open tomato sauce cans & set aside
- Once onions & garlic are translucent; add chopped tomatoes
- Cook tomatoes, stirring occasionally, until cooked through & moisture has mostly evaporated, on low to medium-low heat (approximately 5-10 minutes)
- Turn pasta water up to medium - medium high heat to bring to a rolling boil
- Add tomato sauce
- Add Italian seasoning, garlic powder, salt, pepper, oregano; mix in well
- boil pasta to desired doneness (7-10 minutes)
- Drain pasta & mix with sauce
