almond spaghetti
I don't usually eat meat in my spaghetti; I prefer vegetables. I was looking for a filling spaghetti with a meat alternative that had a lower fat protein & I came up with this today. The almonds give a nice crunch & light flavor to the spaghetti. I didn't get pictures for each step on this one, but when I cook it again, I will. :)

Ingredients
- 1-2 tablespoon water, chicken stock, butter or olive oil
- 1 medium onion
- 2-3 large garlic cloves
- 3 medium fresh tomatoes
- 2 cans 7 oz each of tomato sauce
- 2 tablespoons italian seasoning
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 3 small bay leaves
- 1-2 - handfuls of natural, whole almonds; chopped & toasted
- 6 ounces spaghetti pasta (for gf, use gf pasta)
- 1 teaspoon olive oil
- dash/ pinch salt
How To Make almond spaghetti

Step 1Place a large pot of water on low, to start heating (for the pasta)

Step 2Chop onion & garlic

Step 3In skillet, place butter/oil/stock/water & saute onions & garlic until translucent, about 5 or 6 minutes

Step 4Stir occasionally so they don't stick/burn

Step 5Meanwhile, chop tomatoes into large dice

Step 6Open tomato sauce cans & set aside

Step 7Once onions & garlic are translucent; add chopped tomatoes

Step 8Cook tomatoes, stirring occasionally, until cooked through & moisture has mostly evaporated, on low to medium-low heat (approximately 5-10 minutes)

Step 9While tomatoes are cooking, toast almonds (if not already done); remove from pan & set aside

Step 10Turn pasta water up to medium - medium high heat to bring to a rolling boil

Step 11Add tomato sauce

Step 12Add Italian seasoning, garlic powder, salt, pepper, oregano; mix in well

Step 13Add bay leaves
-
Step 14Simmer sauce 10 minutes, stirring so it doesn't stick/burn

Step 15When pasta water is boiling; add salt & olive oil; stir once

Step 16Add pasta (I usually break my spaghetti in half before adding to water, for smaller pieces)

Step 17boil pasta to desired doneness (7-10 minutes)

Step 18Drain pasta & mix with sauce

Step 19When serving, sprinkle toasted almonds on top of spaghetti to serve (1-2 tbsp per person, depending on how much you toasted)
