I don't usually eat meat in my spaghetti; I prefer vegetables. I was looking for a filling spaghetti with a meat alternative that had a lower fat protein & I came up with this today.

The almonds give a nice crunch & light flavor to the spaghetti.

I didn't get pictures for each step on this one, but when I cook it again, I will. :)

How to Make Almond Spaghetti

Step-by-Step

  • 1Place a large pot of water on low, to start heating (for the pasta)
  • 2Chop onion & garlic
  • 3In skillet, place butter/oil/stock/water & saute onions & garlic until translucent, about 5 or 6 minutes
  • 4Stir occasionally so they don't stick/burn
  • 5Meanwhile, chop tomatoes into large dice
  • 6Open tomato sauce cans & set aside
  • 7Once onions & garlic are translucent; add chopped tomatoes
  • 8Cook tomatoes, stirring occasionally, until cooked through & moisture has mostly evaporated, on low to medium-low heat (approximately 5-10 minutes)
  • 9While tomatoes are cooking, toast almonds (if not already done); remove from pan & set aside
  • 10Turn pasta water up to medium - medium high heat to bring to a rolling boil
  • 11Add tomato sauce
  • 12Add Italian seasoning, garlic powder, salt, pepper, oregano; mix in well
  • 13Add bay leaves
  • 14Simmer sauce 10 minutes, stirring so it doesn't stick/burn
  • 15When pasta water is boiling; add salt & olive oil; stir once
  • 16Add pasta (I usually break my spaghetti in half before adding to water, for smaller pieces)
  • 17boil pasta to desired doneness (7-10 minutes)
  • 18Drain pasta & mix with sauce
  • 19When serving, sprinkle toasted almonds on top of spaghetti to serve (1-2 tbsp per person, depending on how much you toasted)
