Ingredients
- 4 cups zucchini, thinly sliced
- 1 cup onion, chopped
- 1 stick margarine or butter
- 2 tablespoons parsley flakes, dried
- - salt and pepper to taste
- 1/4 teaspoon garlic powder
- 1/2 teaspoon chopped fresh basil
- 1/4 teaspoon chopped fresh oregano
- 2 - eggs, beaten
- 2 cups shredded mozzarella cheese
- 1 tablespoon dijon style mustard
- 1 - pie shell, ready made
How To Make zucchini pie

Step 1Preheat oven to 375 degrees. In a large skillet, saute the zucchini and onions in the margarine until softened and onion are translucent. Stir in the parsley, salt, pepper, garlic powder, basil and oregano.

Step 2In a large bowl, combine the eggs, cheese and mustard. Add the zucchini mixture, stir and mix well.

Step 3Pour zucchini mixture into the pie shell. Bake in 375 degree oven for about 20-25 minutes or until golden. Cool slightly before slicing.
