This is a quick meal for a hot summer day - no cooking. No tortillas? You can use your favorite sliced bread and make a tasty sandwich. I pinched the hummus recipe from www.weelicious.com and tweaked it a bit to suit my taste. {You can use store bought if you'd rather} Hint: To keep the thin sliced onions from overpowering everything, put the slices in a bowl of water and let stand for 15 minutes or so. Drain, then place on paper towels and pat off the excess water.

Ingredients

  • - flour tortillas
  • - thin sliced cucumber, tomato, onion, bell pepper
  • - fresh sprouts and/or shredded lettuce
  • - hummus
  • WHITE BEAN BASIL HUMMUS-THIS IS MY FAVORITE
  • 1 can white beans, rinsed and drained
  • 1 cup fresh basil
  • 1 clove garlic
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • - salt
  • 2-4 tablespoons olive oil

How To Make veggie wrap

  • Step 1
    Spread hummus on the tortilla wrap. Pile on the veggies of your choice. Top with sprouts and/or lettuce. Wrap and enjoy.
  • Step 2
    Hummus: Place beans and garlic in a food processor. Pulse several times. Add basil, salt and lemon juice. Process and slowly drizzle in olive oil. Start with 2 T. Add more if needed. Puree until smooth.
