Vegetarian Sloppy Joes. One more recipe which was given to me by a friend. These are good, healthy, and easy to make. You won't miss the meat. If you can't find tempeh you can substitute firm tofu. Tempeh is more firm and meaty but otherwise very similar to tofu.

Ingredients
- 1 large onion, diced
- 1 - green bell pepper, diced
- 4 cloves garlic, minced
- 2 - carrots, shredded
- 1 package (8 ounces) tempeh (substitute firm tofu if necessary), diced
- 2 tablespoons olive oil
- 1 - envelope dry onion soup mix
- 1/4 teaspoon cumin
- 1 can (16 ounces) canned pinto beans, drained and mashed
- 1 can (16 ounces) canned refried beans, fat free
- 1/2 cup bbq sauce

Step 1Briefly saute onion, bell pepper, garlic, carrots, and tempeh in olive oil. Combine all ingredients in slow coker. Cook on low for 4-5 hours. Serve hot on whole wheat buns.
