I got this recipe from a magazine several years ago. It is really good and easy to make. The sauce I use to put on this burger did not come with the recipe, I don't remember were I got the recipe for it, but it really goes well with the veggie burger.

Ingredients

  • 1 small zucchini, grated, i peel mine
  • 1 medium potato, peeled and grated
  • 1 medium carrot, peeled and grated
  • 1/4 cup grated onion
  • 2 - eggs
  • - milk for blending, add as much as needed
  • - salt and pepper to taste
  • GREEK SAUCE
  • 1/2 cup milk
  • 1/2 cup cottage cheese
  • 1/2 cup fetta cheese, crumbled
  • 1 teaspoon oregano, dried
  • 1/4 teaspoon lemon zest, grated
  • - black pepper to taste

How To Make veggie burger

  • Step 1
    Mix first 6 ingredients, mix well. Pour 1/2 cup of batter onto hot griddle sprayed with cooking spray. Cook 2-3 minutes on each side until brown. Serve on wheat bun with onion and lettuce.
  • Step 2
    For Greek Sauce: Combine all ingredients in blender, process until smooth. Spread on buns for veggie burger or can be served as a dip for raw veggies.
