bonnie's vegetarian pizza
I got this easy recipe out of a health magazine many years ago, and I love the versatility. Whatever you decide to do with this recipe seems to work! Most of us have the ingredients in our pantry and fridge, so there is no need to buy special foods. Made as written, each pizza contains only 296 calories and 5 points for weight watchers. It is delicious and satisfying. Enjoy! Photos are my own.

Ingredients
- 3 - tablespoons chopped red onion
- 1 - teaspoon minced garlic
- 1/3 - cup carrots, grated
- 1/2 - cup sliced mushrooms, canned or fresh
- 1 - tablespoon cilantro, minced
- 1/2 - cup kidney beans, drained
- 3/4 - cup part-skim mozzerella cheese
- 2 - 6 inch flour tortillas
- - kitchen spray
How To Make bonnie's vegetarian pizza

Step 1A word about cheese.....I really like this pizza fixed many different ways. Monterey Jack cheese and Pepper Jack mixed are delicious. Don't be afraid to experiment.

Step 2Saute onion and garlic in a hot, medium-sized, nonstick pan that has been sprayed with kitchen spray. Saute just one minute.

Step 3Add mushrooms and grated carrots. Saute just two minutes more, and remove from heat.

Step 4Add the cilantro.

Step 5Place the two flour tortillas on the baking sheet. Set the rack at the top of the oven. Set the broiler on high.

Step 6Toast the tortillas under the broiler until golden brown around the edges, about 2 minutes. Turn them over and toast the other side, about 1 minute until crisp. Watch them carefully, or they will burn.

Step 7Add 1/2 of the cheese and all the beans to the toasted tortillas. Distribute it evenly on the pizzas.(Reseve the other half for the topping)

Step 8Now add the cooked vegetables.

Step 9Add the reserved cheese to the tops of the pizza. Put the pizzas back under the broiler and broil for one minute or just until the cheese melts.
