Simple enough for week nights, with left over cold rice.

Ingredients

  • 3 cups parboiled rice, cooked and cold
  • 2 - scallions, chopped
  • 3 cloves garlic, smashed
  • 1/2 teaspoon ginger
  • 2 tablespoons sesame oil
  • 1 bunch asparagus, chopped
  • 1 cup peas/carrots, frozen
  • 1 bunch bean sprouts, fresh
  • 3 - eggs, scrambled
  • 1/2 cup soy sauce

How To Make vegetarian fried rice

  • Step 1
    preferably in a wok, but can be also made in a large pan. saute in the sesame oil the scallions, garlic, ginger and asparagus for about 1 min, remove and set aside.
  • Step 2
    stir fry the rice with the soy sauce till well combined and nicely browned.
  • Step 3
    scramble the eggs and microwave 2 mins, chop up.
  • Step 4
    add everything back to rice,including the frozen peas and carrots, stir and let cook another 15 mins on medium, till peas and carrots defrost.
