Ethiopian cuisine not only focuses on meats, but vegetable stews as well. Feel free to add some Ethiopian berbere to spicy up this stew.

  • 1 large
    onion, sliced
  • 2 large
    carrots, sliced
  • 3 medium
    red potatoes, cut 1 inch pieces
  • 1/4
    head cabbage, sliced
  • 8 oz
    green beans, sliced
  • 3 clove
    garlic, peeled and crushed
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    ground turmeric
  • 1/2 tsp
    black pepper
  • 1 tsp
  • 3 c
    water or vegetable broth

How to Make Vegetable Stew - Ethiopian Style


  1. In a skillet, brown the onion in ghee or vegetable oil over medium heat. Add in garlic and saute for 1-2 minutes more.
  2. Add the remaining vegetables and seasonings and blend well. Add the water or vegetable broth.
  3. Cook over low heat for 30-40 minutes until vegetables are tender. Serve hot.
