Ingredients
- 1 large onion, sliced
- 2 large carrots, sliced
- 3 medium red potatoes, cut 1 inch pieces
- 1/4 - head cabbage, sliced
- 8 ounces green beans, sliced
- 3 cloves garlic, peeled and crushed
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 3 cups water or vegetable broth
How To Make vegetable stew - ethiopian style

Step 1In a skillet, brown the onion in ghee or vegetable oil over medium heat. Add in garlic and saute for 1-2 minutes more.

Step 2Add the remaining vegetables and seasonings and blend well. Add the water or vegetable broth.

Step 3Cook over low heat for 30-40 minutes until vegetables are tender. Serve hot.
