Ethiopian cuisine not only focuses on meats, but vegetable stews as well. Feel free to add some Ethiopian berbere to spicy up this stew.

Ingredients

  • 1 large onion, sliced
  • 2 large carrots, sliced
  • 3 medium red potatoes, cut 1 inch pieces
  • 1/4 - head cabbage, sliced
  • 8 ounces green beans, sliced
  • 3 cloves garlic, peeled and crushed
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 3 cups water or vegetable broth

How To Make vegetable stew - ethiopian style

  • Step 1
    In a skillet, brown the onion in ghee or vegetable oil over medium heat. Add in garlic and saute for 1-2 minutes more.
  • Step 2
    Add the remaining vegetables and seasonings and blend well. Add the water or vegetable broth.
  • Step 3
    Cook over low heat for 30-40 minutes until vegetables are tender. Serve hot.
