- 1 cup chopped white onion
- 3 tablespoons herb butter
- 1 teaspoon red pepper
- 6 - eggs
- 1/4 teaspoon salt
- 2 tablespoons fresh grated parmesan cheese
- 1/2 cup shredded mozzarella cheese
- HERB BUTTER
- 7 ounces butter
- 1 teaspoon olive oil
- 1 teaspoon roasted garlic, minced
- 1 teaspoon fresh basil, chopped
- 1 teaspoon oregano
- 1 teaspoon rosemary
- 1 teaspoon thyme

Step 1HERB BUTTER: In a small sauce pan on low heat add olive oil, herbs and garlic; saute for 1 minute. Add butter and bring to a boil, do not burn.

Step 2Preheat oven to 350 degrees Melt 3 Tbs. herb butter in a 10 1/2 inch oven proof skillet over medium heat. Add red pepper and onions, Saute onions until soft.

Step 3Beat eggs, salt and cheese together. Pour egg mixture over onions, sprinkle mozzarella cheese over the top. Place in oven. Bake for 15 minutes. Slide onto a serving dish and cool before serving.
