Drain the Rotel, add drained liquid to crock pot. Also add half the tomato sauce to the crockpot. Season as desired, I add lemon pepper to my liquid in the crockpot.
Mix the drained Rotel, 1/2 c. of cheese and all ingredients (except peppers)together saving the 1/2 can of tomato sauce and 2 cups of cheese.
Fill the peppers by pressing meat mixture firmly into the peppers and fill till mixture is mounded over the edge of the peppers.
Place pepper halves in pot and pour remaining tomato sauce evenly over the eight pepper halves.
Add remaining cheese evenly over peppers 10min. before serving.
Plate and garnish with sour cream. Enjoy!
