Ingredients
- 1 pound lean ground beef
- 1 pound ground pork sausage ( i use jimmy dean)
- 1/2 cup finely chopped onion
- 11/2 cups cooked wild rice mixture
- 1 tablespoon minced garlic
- 1 can 8oz tomato divided
- 1 can rotel
- 1/4 cup minced cilantro
- 1 teaspoon (or more)each of cumin, oregano, salt and lemon pepper
- 21/2 cups grated mexican blend divided
- 4 large bell peppers, cleaned and cut in half
- 1 cup drained and rinsed canned black beans if desired
How To Make taste of texas peppers!

Step 1Drain the Rotel, add drained liquid to crock pot. Also add half the tomato sauce to the crockpot. Season as desired, I add lemon pepper to my liquid in the crockpot.

Step 2Mix the drained Rotel, 1/2 c. of cheese and all ingredients (except peppers)together saving the 1/2 can of tomato sauce and 2 cups of cheese.

Step 3Fill the peppers by pressing meat mixture firmly into the peppers and fill till mixture is mounded over the edge of the peppers.

Step 4Place pepper halves in pot and pour remaining tomato sauce evenly over the eight pepper halves.

Step 5Add remaining cheese evenly over peppers 10min. before serving.

Step 6Plate and garnish with sour cream. Enjoy!
