This dish is from my step-grandmother, Patsy Ruth. This is one of my very favorite dishes to use during the holidays, and I have yet to meet a single person who did not love this dish (even the ones who dislike sweet potatoes).

Ingredients

  • CASSEROLE
  • 5 large sweet potatoes
  • 1/2 cup butter
  • 2 large eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/3 cup milk
  • TOPPING
  • 1/2 cup heavy cream
  • 1 cup brown sugar
  • 1/3 cup melted butter
  • 1 cup chopped pecans

How To Make sweet potato casserole (pr's recipe)

  • Step 1
    Peel potatoes and cook until tender. Whip. Add butter, sugar, eggs, vanilla, and milk, mixing well. Pour mixture into a 9x13 dish.
  • Step 2
    For topping: In a pan, add cream and heat to simmer. Add brown sugar and stir well until fully dissolved. Cook to gentle boil stage. Beat in melted butter and pecans. Pour over casserole
  • Step 3
    Bake at 350 for 20-30 minutes, or until bubbly on top.
