this was given to me. sounds wonderful and would work on many diets as well as vegans

Ingredients

  • 1 can black beans
  • 1 can yams large can
  • 1 cup corn
  • 1 medium onion chopped
  • 4 cloves garlic diced
  • 2 teaspoons perpared mustard
  • 2 teaspoons soy sauce
  • 2 teaspoons cumin
  • 1 teaspoon chilli powder
  • 1 tablespoon tumeric
  • - cayenne pepper to taste
  • - tortilla shells
  • - oil for saute'ing
  • 1/4-3/4 cup water
  • - shredded cheese, salas, sour cream for add ons

How To Make sweet potato burritos

  • Step 1
    1.In a large skillet, sauté onion and garlic until soft (I actually leave my onion a bit crunchy). 2.In a separate pot, heat black beans and corn until warm. 3.After onions are at desired texture, add mashed yams/sweet potatoes to skillet (Since canned yams are very soft I mash mine in the skillet). 4.After yams are warm, spoon the black bean/corn mixture into the skillet leaving the bean juice behind. Mix and heat. 5.In a small dish mix mustard, soy sauce, cumin, chili powder, turmeric, and cayenne pepper. Add to skillet. 6.If the mixture seems paste-like, add a small amount of water until a desired consistency is reached. 7.Spoon onto tortilla and fold into a burrito. Enjoy!
