Made this several times...very easy and yummy.

Ingredients

  • 2 pounds yellow summer squash
  • 4 slices toasted wheat bread, cut into small pieces
  • 1/2 cup chopped onion
  • 2 tablespoons margarine or butter
  • 2 tablespoons sugar
  • 1/2 cup mayonnaise
  • 1 - beaten egg
  • 1/2 cup sauteed red bell pepper
  • 1 cup shredded mexican style shredded cheese

How To Make summer squash casserole

  • Step 1
    Cook squash and onion till tender, drain, and mash. Add margarine, sugar, mayo, beaten egg, red bell pepper, toast cut up in pieces, salt and pepper to taste, and half of the shredded cheese. Put into casserole dish and cover w/remaining cheese. Bake 350 for 30 min.
