Ingredients
- 1/4 cup vegetable oil
- 1 tablespoon garlic,minched
- 1/2 cup onion,chopped
- 1 pound ground chicken (season well with salt and pepper)
- 2 cups tomatoes,chopped (fresh or canned)
- 2 cups zucchini,sliced (do not peel)
- 2 14 oz cans chicken broth (reserve 1/2 cup)
- 1 1/2 teaspoons oregano, dried
- 2 tablespoons corn starch mixed with remaining 1/2 cup broth
- - pasta or rice (enough for 4)
- - parmesan cheese
How To Make summer goulash

Step 1Saute garlic and onion in oil until soft,add chicken and saute until browned.

Step 2Add tomatoes,zucchini,broth and oregano,simmer 10-15 minutes until tender.

Step 3Add cornstarch/broth mixture.Heat through to thicken.

Step 4Serve over pasta or rice.Sprinkle with cheese.
