This puts those garden fresh veggies to good use.Also so quick and easy to make.Enjoy with a nice loaf of crusty bread!

Ingredients

  • 1/4 cup vegetable oil
  • 1 tablespoon garlic,minched
  • 1/2 cup onion,chopped
  • 1 pound ground chicken (season well with salt and pepper)
  • 2 cups tomatoes,chopped (fresh or canned)
  • 2 cups zucchini,sliced (do not peel)
  • 2 14 oz cans chicken broth (reserve 1/2 cup)
  • 1 1/2 teaspoons oregano, dried
  • 2 tablespoons corn starch mixed with remaining 1/2 cup broth
  • - pasta or rice (enough for 4)
  • - parmesan cheese

How To Make summer goulash

  • Step 1
    Saute garlic and onion in oil until soft,add chicken and saute until browned.
  • Step 2
    Add tomatoes,zucchini,broth and oregano,simmer 10-15 minutes until tender.
  • Step 3
    Add cornstarch/broth mixture.Heat through to thicken.
  • Step 4
    Serve over pasta or rice.Sprinkle with cheese.
