This puts those garden fresh veggies to good use.Also so quick and easy to make.Enjoy with a nice loaf of crusty bread!

Ingredients

  • 1/4 c
    vegetable oil
  • 1 Tbsp
    garlic,minched
  • 1/2 c
    onion,chopped
  • 1 lb
    ground chicken (season well with salt and pepper)
  • 2 c
    tomatoes,chopped (fresh or canned)
  • 2 c
    zucchini,sliced (do not peel)
  • 2 14 oz can(s)
    chicken broth (reserve 1/2 cup)
  • 1 1/2 tsp
    oregano, dried
  • 2 Tbsp
    corn starch mixed with remaining 1/2 cup broth
  • ·
    pasta or rice (enough for 4)
  • ·
    parmesan cheese

How to Make Summer Goulash

Step-by-Step

  1. Saute garlic and onion in oil until soft,add chicken and saute until browned.
  2. Add tomatoes,zucchini,broth and oregano,simmer 10-15 minutes until tender.
  3. Add cornstarch/broth mixture.Heat through to thicken.
  4. Serve over pasta or rice.Sprinkle with cheese.
