1/4 c
vegetable oil
1 Tbsp
1/2 c
1 lb
ground chicken (season well with salt and pepper)
2 c
tomatoes,chopped (fresh or canned)
2 c
zucchini,sliced (do not peel)
2 14 oz can(s)
chicken broth (reserve 1/2 cup)
1 1/2 tsp
oregano, dried
2 Tbsp
corn starch mixed with remaining 1/2 cup broth
pasta or rice (enough for 4)
parmesan cheese

How to Make Summer Goulash


  • 1Saute garlic and onion in oil until soft,add chicken and saute until browned.
  • 2Add tomatoes,zucchini,broth and oregano,simmer 10-15 minutes until tender.
  • 3Add cornstarch/broth mixture.Heat through to thicken.
  • 4Serve over pasta or rice.Sprinkle with cheese.
