Ingredients

  • 2 large poblano peppers (skinned,halved,cleaned)
  • 1/4 cup la preferida refried beans
  • 1/4 cup mateo's salsa
  • 1/4 cup cooked rice
  • 1/4 cup onion diced
  • 1/2 cup peppers diced (mix hot and sweet to taste)
  • 1/2 stick kielbasa sausage
  • few dash sriracha hot chili sauce, chili pepper mix to taste
  • 1/2 cup shredded mexican 4 cheese

How To Make stuffed poblano pepper

  • Step 1
    char poblano peppers over open flame, scrape off outer skin, slice in half and remove seeds (save seeds)
  • Step 2
    in a bowl mix rest of ingredients except cheese, mix thoroughly and fill sliced poblano peppers.
  • Step 3
    bake in a preheated 350' oven for 30 minutes. Sprinkle with cheese and bake an additional 5 minutes.
