Ingredients
- 1 1/2 pounds lamb, boneless cut into 2 inch cubes
- 1 1/2 tablespoons olive oil
- 1/2 medium sweet onion, chopped
- 1/2 - head of garlic, unpeeled, seperated,
- 1 - bayleaf
- 1/2 tablespoon paprika, sweet mild
- 1/4 teaspoon cinnamon
- 1/4 cup red wine vinegar, good quality
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, freshly ground
- - lamb stock/broth (as needed)
How To Make stewed lamb

Step 1Heat the oil in a large pan. Add the meat pieces and cook till they are nicely browned.

Step 2Then add the onions, and fry until they are golden.

Step 3Add the garlic, bay leaf, paprika, cinnamon, vinegar, salt and pepper.

Step 4Turn heat to low, cover the pan and let simmer for 2 hours, until tender .

Step 5Check periodically to make sure it is not drying out...add stock/broth as necessary.
