Ingredients For stewed lamb

  • 1 1/2 lb
    lamb, boneless cut into 2 inch cubes
  • 1 1/2 Tbsp
    olive oil
  • 1/2 md
    sweet onion, chopped
  • 1/2
    head of garlic, unpeeled, seperated,
  • 1
    bayleaf
  • 1/2 Tbsp
    paprika, sweet mild
  • 1/4 tsp
    cinnamon
  • 1/4 c
    red wine vinegar, good quality
  • 1 tsp
    sea salt
  • 1/2 tsp
    black pepper, freshly ground
  • lamb stock/broth (as needed)

How To Make stewed lamb

  • 1
    Heat the oil in a large pan. Add the meat pieces and cook till they are nicely browned.

    Then add the onions, and fry until they are golden.
  • 3
    Add the garlic, bay leaf, paprika, cinnamon, vinegar, salt and pepper.

    Turn heat to low, cover the pan and let simmer for 2 hours, until tender .
  • 5
    Check periodically to make sure it is not drying out...add stock/broth as necessary.
