Ingredients

  • 1 1/2 pounds lamb, boneless cut into 2 inch cubes
  • 1 1/2 tablespoons olive oil
  • 1/2 medium sweet onion, chopped
  • 1/2 - head of garlic, unpeeled, seperated,
  • 1 - bayleaf
  • 1/2 tablespoon paprika, sweet mild
  • 1/4 teaspoon cinnamon
  • 1/4 cup red wine vinegar, good quality
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper, freshly ground
  • - lamb stock/broth (as needed)

How To Make stewed lamb

  • Step 1
    Heat the oil in a large pan. Add the meat pieces and cook till they are nicely browned.
  • Step 2
    Then add the onions, and fry until they are golden.
  • Step 3
    Add the garlic, bay leaf, paprika, cinnamon, vinegar, salt and pepper.
  • Step 4
    Turn heat to low, cover the pan and let simmer for 2 hours, until tender .
  • Step 5
    Check periodically to make sure it is not drying out...add stock/broth as necessary.
