Espinacas con garbanzos is an addictive vegetarian dish made with spinach and chickpeas. There are many variations for this dish. I hope you will enjoy this version.

Ingredients For spinach and chickpea

  • 2 Tbsp
    spanish olive oil, for frying
  • 2 - 3 clove
    garllc, minced
  • 1/2 sm
    onion, diced
  • 1 bag
    10 ounces, baby spinach, washed dried
  • 1 can
    18 - 19 ounces, chickpeas, rinsed, drained
  • 1/4 tsp
    sea salt
  • 1/4 tsp
    black pepper
  • pinch
    cayenne pepper
  • 1/2 tsp
    sweet paprika
  • 1 - 2 Tbsp
    sherry vinegar
  • chopped cilantro, garnish

How To Make spinach and chickpea

    Put a pan on medium low heat, and add the olive oil. Once it is heated add the garlic and onion, cook for 5 minutes.

    Now, add the spinach, garbanzo beans, salt, cayenne pepper, black pepper and paprika; mixing well. Lightly mash the beans as the mixture cooks. (10 - 15 minutes) Add a little water if necessary.

    Once heated, remove the pan from heat, and add the vinegar and toss. Garnish with the cilantro and serve with a nice warm crusty bread.
