Ingredients
- 2 tablespoons spanish olive oil, for frying
- 2 - 3 cloves garllc, minced
- 1/2 small onion, diced
- 1 bag 10 ounces, baby spinach, washed dried
- 1 can 18 - 19 ounces, chickpeas, rinsed, drained
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- pinch cayenne pepper
- 1/2 teaspoon sweet paprika
- 1 - 2 tablespoons sherry vinegar
- chopped cilantro, garnish
How To Make spinach and chickpea

Step 1Put a pan on medium low heat, and add the olive oil. Once it is heated add the garlic and onion, cook for 5 minutes.

Step 2Now, add the spinach, garbanzo beans, salt, cayenne pepper, black pepper and paprika; mixing well. Lightly mash the beans as the mixture cooks. (10 - 15 minutes) Add a little water if necessary.

Step 3Once heated, remove the pan from heat, and add the vinegar and toss. Garnish with the cilantro and serve with a nice warm crusty bread.
