  • 1 pound ground beef
  • 1 cup salsa
  • 1 tablespoon chili powder
  • 1 can 15 oz black beans-rinsed/drained
  • 1 can corn- drained
  • 1 cup rice
  • 2 + cups chicken broth
  • 1-1/2 cup colby shredded cheese

How To Make spicy taco rice skillet

  • Step 1
    In a Deep non-stick skillet, brown ground beef, until no longer pink. Add Salsa, Chili powder, corn, and black beans.
  • Step 2
    Add rice and broth. Stir to combined. Cover. Bring to a boil, then reduce to a simmer for 22-25min, or until broth is absorbed. Sprinkle with cheese and return lid to ensure melting.
