Ingredients

  • 2 packages flako pie crust mix
  • 1 large onion, chopped
  • 1 stick butter
  • 4 packages frozen chopped spinach, defrosted and drained of excess water
  • 6 - eggs, set aside a little yolk from one of the eggs
  • 1 pound cottage cheese
  • 3/4 cup grated romano cheese
  • 1/2 cup vegetable oil
  • 1 can canola oil spray
  • 1/4 pound feta cheese, crumbled
  • 1 teaspoon dill, fresh or dried
  • - salt and pepper to taste

How To Make spanakopita (spinach pie)

  • Step 1
    Heat oven to 350 degrees. Prepare pie crust according to directions on the box.
  • Step 2
    Saute onion in whole stick of butter, until translucent. In the meantime, squeeze out all remaining water from the spinach. Add the spinach to the onions, just long enough to cook off any excess liquid. Set aside.
  • Step 3
    Grease an 13x 11 inch pan and sides with canola oil spray. Roll out a little more than half of the pie dough and place on bottom and sides of pan.
  • Step 4
    Beat eggs and add remaining ingredients. Combine this with the spinach and onions, and place in pie crust. Cover with remaining pie dough. Combine reserved egg yolk with a little oil and brush on crust. With a sharp knife, score the top of the dough to mark where you'd like to later cut and serve the pieces.
  • Step 5
    Bake for one hour until nicely browned.
