southwestern freekeh platter w cilantro crema
Freekeh is a delicious grain that has so much nutritional valve that it is overtaking quinoa. It has protein, magnesium, B vitamins, fiber, minerals, iron antitoxins and much more. I think it tastes better too. Has a nutty flavor and goes great in any recipe that calls for a grain, like rice, quinoa, barley etc... it is a great vegan dish or you can add an animal protein if you want

Ingredients
- 6 cups freekah cooked per package directions
- 3 cans black beans drained and rinsed
- 1/2 - head red cabbage chopped
- 2 large jalapenos seeded and sliced
- 1 cup carrots cut into matchsticks
- 2 large tomatoes chopped
- 1 medium red onion sliced
- 1 cup hemp seeds
- 2 small zucchini spiralized
- FOR CREMA
- 1 large jalapeno seeded
- 4 cloves garlic
- 1 cup cilantro leaves
- - zest and juice of 1 small lime
- 2 small avocados
- 2 cups mexican crema
- 1 teaspoon salt
How To Make southwestern freekeh platter w cilantro crema

Step 1For the crema add the jalapeno, garlic, avocados, and cilantro in a food processor. Process until well mixed. Add the crema and salt and process until smooth. Set aside in fridge.

Step 2Cook the Freekeh and spread on bottom of a large platter or into individual bowls. Top with black beans, Red cabbage, carrots, red onion, tomatoes hemp seeds and spiralized zucchini.

Step 3Drizzle Crema over top when serving.
