I have been perfecting my beans for many years. Many people have told me that they are the very best they ever had! Also, the nasty gas is gone "like magic." If you love deep-down finished flavored beans, these are for you. Add some hot buttered cornbread and wait for the yums from everyone.

Who knew a Crock Pot could turn out pinto beans this well-cooked and flavorful! We used ham hocks and this gave the broth and beans a rich flavor. The pinto beans are slow-cooked to tender perfection. The spices are spot-on and we loved the slight flavor cumin adds. Serve with a big slab of cornbread and you have a traditional Southern meal.

Ingredients

  • 1 pound dried pinto beans
  • 2 - ham hocks or 1 meaty ham bone
  • 2/3 cup fresh cilantro
  • 1 - onion, chopped
  • 1 tablespoon chopped garlic
  • 2 tablespoons Knorr tomato bouillon with chicken flavor
  • 1 teaspoon rubbed sage
  • 1 teaspoon cumin
  • 1 teaspoon lemon pepper
  • 1 teaspoon oregano, dried Mexican
  • 1 1/4 teaspoons ground ginger (secret for no gas)
  • 1 teaspoon dry mustard (secret for no gas)
  • 4 - bay leaves, dried

At the end of the recipe, Lori says to add seasoning to your taste. We did add a little extra salt and pepper.
  • Picking through and cleaning the beans.
    Step 1
    Pick through and rinse beans well.
  • Beans placed in a slow cooker.
    Step 2
    Place beans in the Crock Pot.
  • Beans covered with water.
    Step 3
    Add water until beans are covered by 5 inches.
  • Remaining ingredients added to a slow cooker.
    Step 4
    Add all ingredients and turn Crock Pot on high for two hours.
  • Beans set to cook in the slow cooker.
    Step 5
    Turn the Crock Pot to low and go to bed! A total cooking time of 12 hrs. Two hours on high and ten hours on low.

    Step 6
    In the morning, check for liquid, spices, and doneness.... adjust spices and add water or tomato sauce, if needed.
  • Step 7
    If you love heat, add chopped peppers at the beginning.
