only tried it once and it was a little spicy for me, but still a really good dish

Ingredients

  • 1 cup chicken broth
  • 1 can diced tomatoes - undrained
  • 1/4 cup flour
  • 2 tablespoons olive oil
  • 3/4 pound polish sausage - cut into 1/2-in pieces
  • 1 - medium onion - diced
  • 1 - green bell pepper - diced
  • 2 - ribs celery - chopped
  • 1 - carrot - peeled and chopped
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1/8 teaspoon ground red pepper
  • 1 cup white rice

How To Make smoked sausage gumbo

  • Step 1
    sprinkle flour evenly over bottom of skillet. cook til flour begins to turn brown. reduce heat for 4 mins. stir in oil until smooth
  • Step 2
    chop celery and carrots dice onion and bell pepper cut sausage
  • Step 3
    combine broth and tomatoes in slow cooker add flour mixture to slow cooker
  • Step 4
    add sausage, onion, bell pepper, celery, carrot, oregano, thyme and ground red pepper to slow cooker
  • Step 5
    stir well, cover and cook on LOW for 4 1/2 - 5hrs
  • Step 6
    about 30 minutes before gumbo is ready, prepare rice. serve gumbo over rice for meal
