Shrimp Scampi over Quinoa Pilaf

1 lbshrimp

1/4 colive oil

1/4 cmargarine

2 clovegarlic

1/4 tspred pepper flakes

2 Tbspdry white wine

2 Tbsplemon juice

1/4 tspsalt

1/8 tsppepper

3 Tbspfresh parsley, chopped or 1 1/4 tsp dried

3-4 cquinoa, cooked
-
1 1/2 can(s)carrots, chopped

1/2 conion,chopped

1/4 ccelery, chopped
-
1/4 cmargarine
-
2 clovegarlic, crushed

1 calmonds (optional)

1/4 tsporegano, dried

How to Make Shrimp Scampi over Quinoa Pilaf
- Scampi:
Heat oil and 2 Tbsp of margarine in large skillet. Add garlic and pepper flakes: cook 1 minute. add shrimp; cook 6 minutes. Remove shrimp with slotted spoon to plate; keep warm. Reserve the oil from the skillet. - Cook Quinoa according to package directions. I used 1 1/2 C quinoa and 3 cups water. This makes the perfect amount.
- Saute vegetables in oil until crisp/tender; stir in oregano. Add the cooked quinoa to the vegetable in the skillet, mix well. Salt to taste. Add almonds (optional). Remove from skillet.
- Add wine, lemon juice, margarine, salt, pepper and parsley to skillet. Heat for 1 minute. Add Quinoa Pilaf to skillet and mix well. Put Quinoa pilaf on plate, top with the Shrimp scampi and drizzle with the reserved oil.
