shrimp scampi over quinoa pilaf
This is a delicious and healthy recipe. I have been doing the 17 day diet and this is a great dish, full of flavor and allowed on the diet. Hope you all enjoy this as much as my family. They inhale it!

Ingredients
- 1 pound shrimp
- 1/4 cup olive oil
- 1/4 cup margarine
- 2 cloves garlic
- 1/4 teaspoon red pepper flakes
- 2 tablespoons dry white wine
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons fresh parsley, chopped or 1 1/4 tsp dried
- 3-4 cups quinoa, cooked
- 1 1/2 cans carrots, chopped
- 1/2 cup onion,chopped
- 1/4 cup celery, chopped
- 1/4 cup margarine
- 2 cloves garlic, crushed
- 1 cup almonds (optional)
- 1/4 teaspoon oregano, dried
- - salt to taste
How To Make shrimp scampi over quinoa pilaf

Step 1Scampi: Heat oil and 2 Tbsp of margarine in large skillet. Add garlic and pepper flakes: cook 1 minute. add shrimp; cook 6 minutes. Remove shrimp with slotted spoon to plate; keep warm. Reserve the oil from the skillet.

Step 2Cook Quinoa according to package directions. I used 1 1/2 C quinoa and 3 cups water. This makes the perfect amount.

Step 3Saute vegetables in oil until crisp/tender; stir in oregano. Add the cooked quinoa to the vegetable in the skillet, mix well. Salt to taste. Add almonds (optional). Remove from skillet.

Step 4Add wine, lemon juice, margarine, salt, pepper and parsley to skillet. Heat for 1 minute. Add Quinoa Pilaf to skillet and mix well. Put Quinoa pilaf on plate, top with the Shrimp scampi and drizzle with the reserved oil. Enjoy!
