My son Sean has recently declared himself a vegetarian and has shared this recipe to make as it is his favorite.

Ingredients For sean's favorite vegetarian chili

  • 1 Tbsp
    olive oil
  • 1 md
    onion, chopped
  • 2
    bay leaves
  • 1 tsp
    ground cumin
  • 2 Tbsp
    fresh oregano, chopped
  • 1 Tbsp
    salt
  • 1 stalk
    celery, chopped
  • 3 clove
    garlic, chopped
  • 2 can
    (4 oz) chopped green chile peppers, drained
  • 2 pkg
    16 oz vegetarian burger crumbles
  • 3 can
    28 oz whole peeled tomatoes, crushed
  • 1/4 c
    chili powder
  • 1 Tbsp
    ground black pepper
  • 1 can
    (15 oz) kidney beans, drained
  • 1 can
    (15oz) garbanzo beans,drained
  • 1 can
    (15 oz) black beans, drained
  • 2
    green bell peppers, chopped

How To Make sean's favorite vegetarian chili

    In a large pot, add the first 6 ingredients. Cook until the onion is tender, then mix in the celery, green peppers, garlic and chili peppers.

    In a separate frying pan, cook the vegetarian crumbles until cooked through. Add this to the first pot.

    Reduce heat to low. Season with the chili powder and pepper. Stir in all of the different the beans and bring to a boil.

    Reduce heat to a simmer and simmer for 45 minutes.
