sean's favorite vegetarian chili

My son Sean has recently declared himself a vegetarian and has shared this recipe to make as it is his favorite.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon salt
  • 1 stalk celery, chopped
  • 3 cloves garlic, chopped
  • 2 cans (4 oz) chopped green chile peppers, drained
  • 2 packages 16 oz vegetarian burger crumbles
  • 3 cans 28 oz whole peeled tomatoes, crushed
  • 1/4 cup chili powder
  • 1 tablespoon ground black pepper
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15oz) garbanzo beans,drained
  • 1 can (15 oz) black beans, drained
  • 2 green bell peppers, chopped

How To Make sean's favorite vegetarian chili

  • Step 1
    In a large pot, add the first 6 ingredients. Cook until the onion is tender, then mix in the celery, green peppers, garlic and chili peppers.
  • Step 2
    In a separate frying pan, cook the vegetarian crumbles until cooked through. Add this to the first pot.
  • Step 3
    Reduce heat to low. Season with the chili powder and pepper. Stir in all of the different the beans and bring to a boil.
  • Step 4
    Reduce heat to a simmer and simmer for 45 minutes.
