My son Sean has recently declared himself a vegetarian and has shared this recipe to make as it is his favorite.

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 bay leaves
- 1 teaspoon ground cumin
- 2 tablespoons fresh oregano, chopped
- 1 tablespoon salt
- 1 stalk celery, chopped
- 3 cloves garlic, chopped
- 2 cans (4 oz) chopped green chile peppers, drained
- 2 packages 16 oz vegetarian burger crumbles
- 3 cans 28 oz whole peeled tomatoes, crushed
- 1/4 cup chili powder
- 1 tablespoon ground black pepper
- 1 can (15 oz) kidney beans, drained
- 1 can (15oz) garbanzo beans,drained
- 1 can (15 oz) black beans, drained
- 2 green bell peppers, chopped
How To Make sean's favorite vegetarian chili

Step 1In a large pot, add the first 6 ingredients. Cook until the onion is tender, then mix in the celery, green peppers, garlic and chili peppers.

Step 2In a separate frying pan, cook the vegetarian crumbles until cooked through. Add this to the first pot.

Step 3Reduce heat to low. Season with the chili powder and pepper. Stir in all of the different the beans and bring to a boil.

Step 4Reduce heat to a simmer and simmer for 45 minutes.
