Ingredients
- 1/4 cup cooking oil
- 1/4 cup flour
- - onion to taste, chopped fine
- - celery to taste, chopped fine
- - bell pepper to taste, chopped fine
How To Make roux

Step 1To make roux heat oil in a flat-bottom pot. Add flour; mix and cook on medium heat, stirring constantly (preferable with a wide, flat spatula), until will browned. (Hint: Make it several shades darker than a brown paper bag.)
