  • 1/4 c
    cooking oil
  • 1/4 c
  • ·
    onion to taste, chopped fine
  • ·
    celery to taste, chopped fine
  • ·
    bell pepper to taste, chopped fine

How to Make Roux


  1. To make roux heat oil in a flat-bottom pot. Add flour; mix and cook on medium heat, stirring constantly (preferable with a wide, flat spatula), until will browned. (Hint: Make it several shades darker than a brown paper bag.)
