The mainstay of a lot of Cajun dishes. I like making more of this, put it in the freezer for another day. This is the start of your Gumbo, dirty rice, and other brown gravy needs.
Ingredients For roux
1/4 ccooking oil
onion to taste, chopped fine
celery to taste, chopped fine
bell pepper to taste, chopped fine
How To Make roux
1To make roux heat oil in a flat-bottom pot. Add flour; mix and cook on medium heat, stirring constantly (preferable with a wide, flat spatula), until will browned. (Hint: Make it several shades darker than a brown paper bag.)
