This is a recipe I found in an old Prevention's cookbook. I have been collecting stuffed pepper recipes and decided to share this one.

Ingredients

4 medium
red peppers
2 1/2 c
cooked rice
4 oz
feta cheese, crumbled
1/2 c
chopped green onions
1/4 c
pimento stuffed olives
1/4 c
defatted low sodium chicken stock
3 Tbsp
almonds, slivered
1/2 tsp
cumin
1/8 tsp
ground saffron

How to Make RICE AND FETA STUFFED PEPPERS

Step-by-Step

  • 1Bring a large saucepan of water to a boil. Slice off stem ends of peppers and remove seeds and membranes.
  • 2Place peppers in boiling water for 2 min, remove and rinse with very cold water. Drain well and place in an 8 x 8 baking dish.
  • 3Combine rice, cheese, onions, olives, stock, almonds, cumin and saffron. Spoon into peppers. Broil 3" to 4" from heating element for 10 - 12 min.
