rice and feta stuffed peppers

This is a recipe I found in an old Prevention's cookbook. I have been collecting stuffed pepper recipes and decided to share this one.

Ingredients

  • 4 medium red peppers
  • 2 1/2 cups cooked rice
  • 4 ounces feta cheese, crumbled
  • 1/2 cup chopped green onions
  • 1/4 cup pimento stuffed olives
  • 1/4 cup defatted low sodium chicken stock
  • 3 tablespoons almonds, slivered
  • 1/2 teaspoon cumin
  • 1/8 teaspoon ground saffron

How To Make rice and feta stuffed peppers

  • Step 1
    Bring a large saucepan of water to a boil. Slice off stem ends of peppers and remove seeds and membranes.
  • Step 2
    Place peppers in boiling water for 2 min, remove and rinse with very cold water. Drain well and place in an 8 x 8 baking dish.
  • Step 3
    Combine rice, cheese, onions, olives, stock, almonds, cumin and saffron. Spoon into peppers. Broil 3" to 4" from heating element for 10 - 12 min.
