I needed an original idea for a food challange that required we use quinoa, bell pepper, and almonds. This is what I came up with.

Ingredients

1 c
quinoa,
1 1/2 c
water
1
cinnamon stick
1 1/2 tsp
curry powder
1/2 tsp
allspice, ground
1/4 tsp
clove, ground
1/4 tsp
cardamom
1/2 c
almonds, blanched
1/2 c
cranraisins
2 or 3 large
bell peppers

How to Make Quinoa Stuffed Bell Peppers

Step-by-Step

  • 1In a large skillet lightly toast almond slivers,add and toast quinoa until starting to darken.
  • 2in a 2 quart sauce pan place water and all the spices and cranrasins.Add quinoa bring to a boil
  • 3stir once lower heat and cover.
  • 4Simmer 20 min. remove from heat
  • 5While quinoa is cooking 1/2 peppers long ways and deseed.
  • 6fill cleaned pepper halfs with quinoa mixture. Place in baking dish.
  • 7place in 350 degree oven covered bake 35 min
  • 8after 35 min uncover and top with a creamy sweet cheese and bake 15 min more or until cheese is melted and browning.
  • 9Serve as a main dish or side dish.
