quinoa stuffed bell peppers

I needed an original idea for a food challange that required we use quinoa, bell pepper, and almonds. This is what I came up with.

Ingredients

  • 1 cup quinoa,
  • 1 1/2 cups water
  • 1 - cinnamon stick
  • 1 1/2 teaspoons curry powder
  • 1/2 teaspoon allspice, ground
  • 1/4 teaspoon clove, ground
  • 1/4 teaspoon cardamom
  • 1/2 cup almonds, blanched
  • 1/2 cup cranraisins
  • 2 or 3 large bell peppers

How To Make quinoa stuffed bell peppers

  • Step 1
    In a large skillet lightly toast almond slivers,add and toast quinoa until starting to darken.
  • Step 2
    in a 2 quart sauce pan place water and all the spices and cranrasins.Add quinoa bring to a boil
  • Step 3
    stir once lower heat and cover.
  • Step 4
    Simmer 20 min. remove from heat
  • Step 5
    While quinoa is cooking 1/2 peppers long ways and deseed.
  • Step 6
    fill cleaned pepper halfs with quinoa mixture. Place in baking dish.
  • Step 7
    place in 350 degree oven covered bake 35 min
  • Step 8
    after 35 min uncover and top with a creamy sweet cheese and bake 15 min more or until cheese is melted and browning.
  • Step 9
    Serve as a main dish or side dish.
