pressure cooker lamb shanks
This is for a stove type pressure cooker. It makes tender, juicy lamb shanks. For a thicker gravy, mix 2 tablespoons of plain flour with 1 ½ tablespoons of water to form a paste. After removing the lamb shanks, stir this paste into the remaining sauce. This is great served with polenta or mashed potatoes.

Ingredients
- 4 tablespoons all-purpose flour
- - salt and pepper, to taste
- 4 large lamb shanks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 3 large carrots, cut into medium-sized chunks
- 2 tablespoons tomato paste
- 1 medium tomato, quartered
- 3/4 cup red wine
- 1/4 cup water
- 1 - beef bouillon cube
How To Make pressure cooker lamb shanks

Step 1Pour the flour into a shallow container. Add a dash of salt and pepper and mix. Coat the lamb shanks in the flour mixture.

Step 2Heat the olive oil in the pressure cooker over medium to high heat. Brown the lamb shanks in the hot oil and remove to a plate.

Step 3Saute the onion, garlic, oregano and carrots for 4-5 minutes.

Step 4Add the tomato paste, tomato, red wine, water and bouillon cube. Stir and bring to a boil then add the lamb shanks back in.

Step 5Cover and lock lid on pressure cooker. Bring to pressure. When pressure is reached, turn heat down to low. Continue cooking for 20-25 minutes.

Step 6Release pressure naturally. Remove lamb shanks from pressure cooker and transfer to serving dish.
