pineapple over rice with versatile sauce
This is quite a flexible recipe. I have done this with chicken and plan to try with other meats: pork or swordfish. It might be interesting to use pasta or couscous. Experiment on your own and let me know what you think.

Ingredients
- 1 can pineapple rings
- 1/2 cup dark brown sugar
- 1/2 teaspoon red pepper flakes
- 1/2 cup pineapple juice from can
- 1/2 cup water or vegetable broth
- 2 tablespoons soy sauce
- 1 - diced red, yellow, or green pepper
- 1 tablespoon corn starch or flour
- 2 cups already cooked mixed white and black rice
How To Make pineapple over rice with versatile sauce

Step 1In a saucepan, combine brown sugar, red pepper flakes, pineapple juice, water or broth, soy sauce, and green pepper.

Step 2Bring to a boil. Add cornstarch gently to thicken, stirring. When it is desired thickness (I like it about the consistency of honey), set aside.

Step 3Prepare (heat if necessary) a bed of rice on each plate.

Step 4Place pineapple rings on the rice. (I use 3 rings, but whatever you decide looks nice).

Step 5Liberally spoon the sauce over rings and rice.

Step 6Put remaining sauce in a pretty little serving bowl. Serve. Enjoy.
