I make my own bread and serve these sandwiches toasted with some tomato soup!

  • 2
    red bell peppers, diced
  • 3
    poblano peppers, diced
  • 2
    small red onions, diced
  • 3
    cloves of garlic, minced
  • 4 c
    mild cheddar cheese, shredded
  • 4 c
    monterey jack cheese, shredded
  • 1 c
    hot and spicy pickles, diced
  • 2 c
    real mayonnaise
  • 1 tsp
  • 1 Tbsp
    mustard (prepared, not powdered)
  • ·
    salt and pepper to taste

How to Make Pimento Cheese Sandwiches


  1. Saute the bell peppers, poblano peppers, onion, and garlic in a large frying pan with a small amount of vegetable oil until translucent. Set aside to cool.
  2. In a large bowl, combine all of the ingredients and mix well.
  3. Refrigerate and enjoy!
