pimento cheese sandwiches

I make my own bread and serve these sandwiches toasted with some tomato soup!

Ingredients

  • 2 - red bell peppers, diced
  • 3 - poblano peppers, diced
  • 2 - small red onions, diced
  • 3 - cloves of garlic, minced
  • 4 cups mild cheddar cheese, shredded
  • 4 cups monterey jack cheese, shredded
  • 1 cup hot and spicy pickles, diced
  • 2 cups real mayonnaise
  • 1 teaspoon cumin
  • 1 tablespoon mustard (prepared, not powdered)
  • - salt and pepper to taste

How To Make pimento cheese sandwiches

  • Step 1
    Saute the bell peppers, poblano peppers, onion, and garlic in a large frying pan with a small amount of vegetable oil until translucent. Set aside to cool.
  • Step 2
    In a large bowl, combine all of the ingredients and mix well.
  • Step 3
    Refrigerate and enjoy!
