Ingredients
- 2 - red bell peppers, diced
- 3 - poblano peppers, diced
- 2 - small red onions, diced
- 3 - cloves of garlic, minced
- 4 cups mild cheddar cheese, shredded
- 4 cups monterey jack cheese, shredded
- 1 cup hot and spicy pickles, diced
- 2 cups real mayonnaise
- 1 teaspoon cumin
- 1 tablespoon mustard (prepared, not powdered)
- - salt and pepper to taste
How To Make pimento cheese sandwiches

Step 1Saute the bell peppers, poblano peppers, onion, and garlic in a large frying pan with a small amount of vegetable oil until translucent. Set aside to cool.

Step 2In a large bowl, combine all of the ingredients and mix well.
