These are really one of my favorites. There was a restaurant in Marin County that served soup and sandwiches and this was one of their specialties. It's long since closed but the sandwich lives on!

Ingredients

  • 1 large
    sourdough roll
  • 1 Tbsp
    thousand island dressing
  • 1/4 can(s)
    olives, sliced
  • 2
    swiss cheese slices
  • 1/8 lb
    pepperoni sliced
  • 1
    tomato

How to Make Capri Sandwich

Step-by-Step

  1. Slice sourdough roll in half.
  2. Spread both halves with Thousand Island Dressing.
  3. Cook pepperoni in microwave on multiple paper towels to absorb fat for about 2 minutes or until crispy.
  4. Layer cooked pepperoni, tomato slices, sliced olives, and top with swiss cheese slices.
  5. Broil until cheese is melted and slightly browned. Enjoy!
