These are really one of my favorites. There was a restaurant in Marin County that served soup and sandwiches and this was one of their specialties. It's long since closed but the sandwich lives on!

sourdough roll
1 Tbsp
thousand island dressing
1/4 can(s)
olives, sliced

swiss cheese slices
1/8 lb
pepperoni sliced

How to Make Capri Sandwich

Step-by-Step

  • 1Slice sourdough roll in half.
  • 2Spread both halves with Thousand Island Dressing.
  • 3Cook pepperoni in microwave on multiple paper towels to absorb fat for about 2 minutes or until crispy.
  • 4Layer cooked pepperoni, tomato slices, sliced olives, and top with swiss cheese slices.
  • 5Broil until cheese is melted and slightly browned. Enjoy!
