These are really one of my favorites. There was a restaurant in Marin County that served soup and sandwiches and this was one of their specialties. It's long since closed but the sandwich lives on!

Ingredients
- 1 large sourdough roll
- 1 tablespoon thousand island dressing
- 1/4 can olives, sliced
- 2 - swiss cheese slices
- 1/8 pound pepperoni sliced
- 1 - tomato
How To Make capri sandwich

Step 1Slice sourdough roll in half.

Step 2Spread both halves with Thousand Island Dressing.

Step 3Cook pepperoni in microwave on multiple paper towels to absorb fat for about 2 minutes or until crispy.

Step 4Layer cooked pepperoni, tomato slices, sliced olives, and top with swiss cheese slices.

Step 5Broil until cheese is melted and slightly browned. Enjoy!
