one skillet southwest chicken
I love chicken and one night I started looking for a way to have something different and this is what i came up with. I live alone so it was just for myself, but it can be adjusted to feed a family of 4. I get two meals out of this recipe. You may want to use a 12 in. skillet or larger I have added 1/2 c. of instant rice to the mix and if you do that don't drain the tomatoes.

Ingredients
- 2 to 4 - chicken breast or tenders
- 1 can chopped tomatoes
- 1/2 can black beans
- 1/2 - chopped onion (sm)
- 1 cup frozen corn
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons salsa (your favorite)
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 package taco seasoning
How To Make one skillet southwest chicken

Step 1Cut chicken into bite size pieces. In a 10 in Skillet add the olive oil and onions, heat on medium. Add chicken and brown for at least 10 minutes or until near done.

Step 2Open tomatoes and drain. Once drained add to the skillet and stir. Let simmer for a few minutes, then add corn and stir. Cover and let simmer for about 5 minutes. Add in Beans (drained and rinsed) and stir, add salt and pepper. Stir in salsa and taco seasoning. Reduce heat, cover and let simmer another 10 to 15 minutes.

Step 3Can be served with tortilla's as a wrap, over rice and with you favorite garnishes.
