I love chicken and one night I started looking for a way to have something different and this is what i came up with. I live alone so it was just for myself, but it can be adjusted to feed a family of 4. I get two meals out of this recipe. You may want to use a 12 in. skillet or larger I have added 1/2 c. of instant rice to the mix and if you do that don't drain the tomatoes.

Ingredients

  • 2 to 4 - chicken breast or tenders
  • 1 can chopped tomatoes
  • 1/2 can black beans
  • 1/2 - chopped onion (sm)
  • 1 cup frozen corn
  • 2 tablespoons olive oil, extra virgin
  • 2 tablespoons salsa (your favorite)
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 package taco seasoning

How To Make one skillet southwest chicken

  • Step 1
    Cut chicken into bite size pieces. In a 10 in Skillet add the olive oil and onions, heat on medium. Add chicken and brown for at least 10 minutes or until near done.
  • Step 2
    Open tomatoes and drain. Once drained add to the skillet and stir. Let simmer for a few minutes, then add corn and stir. Cover and let simmer for about 5 minutes. Add in Beans (drained and rinsed) and stir, add salt and pepper. Stir in salsa and taco seasoning. Reduce heat, cover and let simmer another 10 to 15 minutes.
  • Step 3
    Can be served with tortilla's as a wrap, over rice and with you favorite garnishes.
