This is a meatless version of stuffed peppers packed with flavor and texture!!

Ingredients For not your usual stuffed peppers

  • 4 lg
    red bell peppers halved and seeded
  • 2 c
    cooked wheat berries
  • 2 clove
    garlic minced plus 1 medium shallot chopped
  • 1 pkg
    fresh spinach /two to three cups
  • 1 c
    feta cheese crumbled
  • 1 c
    chopped mushrooms
  • 1/2 c
    chopped parsley(flat leaf)
  • 1/2 tsp
    salt and pepper
  • 1 tsp
    ground cumin
  • 1 Tbsp
    olive oil
  • FILLING NUMBER TWO
  • 2 c
    ricotta cheese
  • 1 lg
    egg beaten
  • 1 pinch
    salt
  • 1/2 tsp
    basil, dried
  • 1/2 c
    parmesan cheese freshly grated
  • 1 Tbsp
    olive oil

How To Make not your usual stuffed peppers

    Cut the peppers in half lengthwise and remove seeds. Leave the stems on if there are any,makes them easier to handle when serving. Cook the wheat berries according to package instructions. This can be done the day before or in the morning of to save time. They take a little over an hour to cook! Sauté the shallot,garlic,chopped mushrooms in the olive oil,seasonwith s+p,cumin,add the parsley and remove from heat. Stir in the torn spinach leaves and the feta cheese.

    Mix the ricotta,egg,pinchnof salt and basil. Spoon evenly into the bottom of the peppers,top with the wheat berry mixture,sprinkle the tops with olive oil,garnish with grated Parmesan cheese and bake for thirty minutes. Enjoy! :)
