1Cut the peppers in half lengthwise and remove seeds. Leave the stems on if there are any,makes them easier to handle when serving.
Cook the wheat berries according to package instructions. This can be done the day before or in the morning of to save time. They take a little over an hour to cook!
Sauté the shallot,garlic,chopped mushrooms in the olive oil,seasonwith s+p,cumin,add the parsley and remove from heat. Stir in the torn spinach leaves and the feta cheese.
2Mix the ricotta,egg,pinchnof salt and basil.
Spoon evenly into the bottom of the peppers,top with the wheat berry mixture,sprinkle the tops with olive oil,garnish with grated Parmesan cheese and bake for thirty minutes. Enjoy! :)
