Ingredients
- 4 large red bell peppers halved and seeded
- 2 cups cooked wheat berries
- 2 cloves garlic minced plus 1 medium shallot chopped
- 1 package fresh spinach /two to three cups
- 1 cup feta cheese crumbled
- 1 cup chopped mushrooms
- 1/2 cup chopped parsley(flat leaf)
- 1/2 teaspoon salt and pepper
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- FILLING NUMBER TWO
- 2 cups ricotta cheese
- 1 large egg beaten
- 1 pinch salt
- 1/2 teaspoon basil, dried
- 1/2 cup parmesan cheese freshly grated
- 1 tablespoon olive oil
How To Make not your usual stuffed peppers

Step 1Cut the peppers in half lengthwise and remove seeds. Leave the stems on if there are any,makes them easier to handle when serving. Cook the wheat berries according to package instructions. This can be done the day before or in the morning of to save time. They take a little over an hour to cook! Sauté the shallot,garlic,chopped mushrooms in the olive oil,seasonwith s+p,cumin,add the parsley and remove from heat. Stir in the torn spinach leaves and the feta cheese.

Step 2Mix the ricotta,egg,pinchnof salt and basil. Spoon evenly into the bottom of the peppers,top with the wheat berry mixture,sprinkle the tops with olive oil,garnish with grated Parmesan cheese and bake for thirty minutes. Enjoy! :)
