A tamale pie topping from scratch from the food blogger Nagi from Recipe tin Eats. Note - to make this gluten free, swap 1 1/2 cups of self raising flour for 1 2/3 cups of gluten free self raising flour.

Ingredients
- - 1/2 cup polenta (corn meal)
- - 1 1/2 cups self raising flour
- - 1/2 cup white sugar (i like to use a little less)
- - 1/2 cup melted butter
- - 1 cup creamed corn
- - 1 cup milk
- - 3 eggs
How To Make nagi's cornbread topping (tamale pie)

Step 1Place the dry ingredients in a bowl. Stir to combine.

Step 2In a jug, mix the wet ingredients. Make a "well" in the dry ingredients and pour in the liquid.

Step 3Stir until just combined. Pour over your tamale pie base (prepared chili) and bake in a 200oC/400oF oven for 20-25 minutes.
