Nagi's Cornbread Topping (Tamale Pie)
Note - to make this gluten free, swap 1 1/2 cups of self raising flour for 1 2/3 cups of gluten free self raising flour.

·1/2 cup polenta (corn meal)
·1 1/2 cups self raising flour
·1/2 cup white sugar (i like to use a little less)
·1/2 cup melted butter
·1 cup creamed corn
·1 cup milk
How to Make Nagi's Cornbread Topping (Tamale Pie)
- Place the dry ingredients in a bowl. Stir to combine.
- In a jug, mix the wet ingredients. Make a "well" in the dry ingredients and pour in the liquid.
- Stir until just combined. Pour over your tamale pie base (prepared chili) and bake in a 200oC/400oF oven for 20-25 minutes.
