THIS IS A DISH WITH LOTS OF FLAVOURS IN IT. IT CAN BE SERVED WITH COUSCOUS OR QUINOA.

Ingredients

  • 1 1/2 cups water or vegetable stock
  • 1 large yellow onions (finely chopped)
  • 2 large red bell peppers (seeded and chopped)
  • 2-3 - garlic cloves,minced
  • 2 teaspoons light brown sugar
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cayenne
  • 1 teaspoon grated or minced fresh ginger
  • 2 - medium sized sweet potatoes cut into 1 cm cubes
  • 1 can diced tomatoes,undrained
  • 2 cups cooked chickpeas,drained and rinsed
  • - salt
  • 1 teaspoon pepper
  • 1/4 cup frozen peas

How To Make moroccan stew

  • Step 1
    heat 3 tablespoons water in a pot over medium heat. add onions, bell peppers and garlic and cook until the onions are translucent.
  • Step 2
    stir in salt,pepper, brown sugar,coriander,cinnamon,cumin,cayenne,ginger,a tablespoon of water(so that the spices dont burn) and cook for 60 secs,stirring constantly. add sweet potatoes and combine well.
  • Step 3
    add the tomatoes,remaining water,frozen peas and chickpeas. bring to boil,then simmer until the sweet potatoes are tender.
  • Step 4
    serve with quinoa or couscous.
