Ingredients

  • 1 1/2 c
    water or vegetable stock
  • 1 large
    yellow onions (finely chopped)
  • 2 large
    red bell peppers (seeded and chopped)
  • 2-3
    garlic cloves,minced
  • 2 tsp
    light brown sugar
  • 1 tsp
    ground coriander
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    ground cayenne
  • 1 tsp
    grated or minced fresh ginger
  • 2
    medium sized sweet potatoes cut into 1 cm cubes
  • 1 can(s)
    diced tomatoes,undrained
  • 2 c
    cooked chickpeas,drained and rinsed
  • ·
    salt
  • 1 tsp
    pepper
  • 1/4 c
    frozen peas

How to Make MOROCCAN STEW

Step-by-Step

  1. heat 3 tablespoons water in a pot over medium heat. add onions, bell peppers and garlic and cook until the onions are translucent.
  2. stir in salt,pepper, brown sugar,coriander,cinnamon,cumin,cayenne,ginger,a tablespoon of water(so that the spices dont burn) and cook for 60 secs,stirring constantly.
    add sweet potatoes and combine well.
  3. add the tomatoes,remaining water,frozen peas and chickpeas.
    bring to boil,then simmer until the sweet potatoes are tender.
  4. serve with quinoa or couscous.
