Ingredients
- 1 1/2 cups water or vegetable stock
- 1 large yellow onions (finely chopped)
- 2 large red bell peppers (seeded and chopped)
- 2-3 - garlic cloves,minced
- 2 teaspoons light brown sugar
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cayenne
- 1 teaspoon grated or minced fresh ginger
- 2 - medium sized sweet potatoes cut into 1 cm cubes
- 1 can diced tomatoes,undrained
- 2 cups cooked chickpeas,drained and rinsed
- - salt
- 1 teaspoon pepper
- 1/4 cup frozen peas
How To Make moroccan stew

Step 1heat 3 tablespoons water in a pot over medium heat. add onions, bell peppers and garlic and cook until the onions are translucent.

Step 2stir in salt,pepper, brown sugar,coriander,cinnamon,cumin,cayenne,ginger,a tablespoon of water(so that the spices dont burn) and cook for 60 secs,stirring constantly. add sweet potatoes and combine well.

Step 3add the tomatoes,remaining water,frozen peas and chickpeas. bring to boil,then simmer until the sweet potatoes are tender.

Step 4serve with quinoa or couscous.
