Ingredients For moroccan stew
1 1/2 c
water or vegetable stock
yellow onions (finely chopped)
red bell peppers (seeded and chopped)
light brown sugar
grated or minced fresh ginger
medium sized sweet potatoes cut into 1 cm cubes
cooked chickpeas,drained and rinsed
How To Make moroccan stew
heat 3 tablespoons water in a pot over medium heat. add onions, bell peppers and garlic and cook until the onions are translucent.
stir in salt,pepper, brown sugar,coriander,cinnamon,cumin,cayenne,ginger,a tablespoon of water(so that the spices dont burn) and cook for 60 secs,stirring constantly.
add sweet potatoes and combine well.
add the tomatoes,remaining water,frozen peas and chickpeas.
bring to boil,then simmer until the sweet potatoes are tender.
serve with quinoa or couscous.
