Mom made these peppers for as long as I can remember! It was a favorite dinner of my dad. I'm not so much a "pepper fan", but Hubby just loves them! So now I make them for him!

Ingredients

  • 4
    bell peppers
  • 1 lb
    ground beef
  • 1/3 c
    chopped onions
  • 2 tsp
    salt
  • 1/3 tsp
    pepper
  • 1 can(s)
    tomato soup
  • 1 tsp
    sugar
  • 1 c
    cooked rice
  • 2 Tbsp
    flour

How to Make Mom's Stuffed Green Peppers

Step-by-Step

  1. Prepare the green peppers. Cut off the tops, and remove the seeds and membrane from each pepper.

    In a large pot of boiling water, boil peppers for 1 minute. Drain and set aside.
  2. In a large skillet, brown the ground beef.
    Add onions, tomato soup, cooked rice, salt, pepper, and sugar. Mix well.
  3. Sprinkle flour over the top, and let simmer for 15 minutes.
    Stir occasionally.
  4. Fill the peppers with the meat/rice mixture.
    Stand upright in casserole dish
    Bake at 275 degrees, for 30 minutes.
  5. *optional, sprinkle the tops with seasoned bread crumbs.
