mom's stuffed peppers

Mom made these peppers for as long as I can remember! It was a favorite dinner of my dad. I'm not so much a "pepper fan", but Hubby just loves them! So now I make them for him! *I have reduced the salt to 1 tsp from 2. We don't use the salt that was used back in the '60's.

Ingredients For mom's stuffed peppers

  • 4
    bell peppers
  • 1 lb
    ground beef
  • 1/3 c
    chopped onions
  • 1 tsp
    salt
  • 1/3 tsp
    pepper
  • 1 can
    tomato soup
  • 1 tsp
    sugar
  • 1 c
    cooked rice
  • 2 Tbsp
    flour
  • water

How To Make mom's stuffed peppers

  • Tops, seeds, and membrane removed the peppers.

    Prepare the bell peppers. Cut off the tops, and remove the seeds and membrane from each pepper. In a large pot of boiling water, boil peppers for 1 minute. Drain and set aside.

    In a large skillet, brown the ground beef. Add onions, tomato soup, cooked rice, salt, pepper, and sugar. Mix well.

    Sprinkle flour over the top, and let simmer for 15 minutes. Stir occasionally. If mixture seems dry add some water to loosen it up.

    Fill the peppers with the meat/rice mixture. Stand upright in casserole dish Bake at 275 degrees, for 30 minutes.
