mom's stuffed peppers
Mom made these peppers for as long as I can remember! It was a favorite dinner of my dad. I'm not so much a "pepper fan", but Hubby just loves them! So now I make them for him! *I have reduced the salt to 1 tsp from 2. We don't use the salt that was used back in the '60's.

Ingredients
- 4 - bell peppers
- 1 pound ground beef
- 1/3 cup chopped onions
- 1 teaspoon salt
- 1/3 teaspoon pepper
- 1 can tomato soup
- 1 teaspoon sugar
- 1 cup cooked rice
- 2 tablespoons flour
- water
How To Make mom's stuffed peppers

Step 1Prepare the bell peppers. Cut off the tops, and remove the seeds and membrane from each pepper. In a large pot of boiling water, boil peppers for 1 minute. Drain and set aside.

Step 2In a large skillet, brown the ground beef. Add onions, tomato soup, cooked rice, salt, pepper, and sugar. Mix well.

Step 3Sprinkle flour over the top, and let simmer for 15 minutes. Stir occasionally. If mixture seems dry add some water to loosen it up.

Step 4Fill the peppers with the meat/rice mixture. Stand upright in casserole dish Bake at 275 degrees, for 30 minutes.

Step 5*optional, sprinkle the tops with seasoned bread crumbs.
