Our family and friends fondly remember many delicious meals prepared by my Mother. Often expected in the summer time were Mom's great crab cakes! I can see her now mixing these up and being humble about the compliments given to her.

Ingredients For mom's crab cakes

  • 2 lb
    backfin crab meat
  • 2
    eggs, beaten well
  • 1/4 c
    milk
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 Tbsp
    prepared mustard
  • 1/2 tsp
    old bay seasoning
  • 1/2 tsp
    worcestershire sauce
  • 1/4 c
    mayonnaise
  • 2 tsp
    minced green pepper
  • 2 tsp
    minced red pepper
  • 1/4 c
    butter, melted
  • 3/4 c
    cracker crumbs

How To Make mom's crab cakes

    Go over crab meat carefully to remove any shell...set aside.

    Add beaten eggs to a large bowl along with the milk, mayonnaise, salt, pepper, mustard, Old Bay seasoning, Worcestershire sauce, minced green and red peppers, melted butter and the cracker crumbs. Mix well. Gently fold in the crab meat and shape into 8 crab cakes.

    You may either fry these in hot butter until golden brown or broil these. Serve with lemon wedges and tarter sauce. Enjoy!
