Mock Crab Cakes
I have fooled both children who hate Fish & or Veggies. Very Light delicious cake, you think is fish, but isn't. I freeze summer zucc, to use thru the winter for recipes like this.

2-3 cshredded zucchini
2 Tbspold bay seasoning
1/4 tspred peper optional
1 cpanko/cornmeal mix, depending on how wet it is maybe less dry mix
·oil to fry.
How to Make Mock Crab Cakes
- clean & rinse dry zucchini, peel if you like or just de seed & shred
- add spices, then egg
- then start to combine panko/cornmeal mix til you get a workable patty able consistency, like ur making salmon or real crab cakes. You may like less dry mix or more than a cup. we like ours firmer.
- Fry in skittle Med/High heat flipping only once, so give it a minute & let it set up.
- this recipe can be doubled for larger servings.
